  1. Mince garlic and shallots in food processor. Add prawns. Add 1 tsp salt.

  4. Slice liver into strips. Add 1 tbsp corn flour, mix thoroughly. Rinse off corn flour.
  5. Cut leeks into thin slices and mix into pork mixture.
  6. Spread out cul fat thinly. Dab dry. Add pork paste, line with cubes of water chestnut and a slice of liver.
  7. Steam for 10 to 15 minutes.
